Last night was chicken for dinner. We ended up having extra, even better. I and finding new ways to deal with leftover beside sending them with DH for lunch. So I did not think to stop and take pictures. But that would have been good. I will think about it next time.
So draw a mental picture for me, ok?
Dice up leftover chicken - Imagine a picture of a cutting board, knife and chicken being diced.
Throw it in a bowl. See a green bowl.
I used craisins but you can use grapes, if you have them on hand. If you use grapes slice them in half. If it was my picture then you would see a bag of craisins and me grabbing a handful.
Throw it in the same bowl as the chicken. See green bowl.
Find some nuts, (walnuts, almonds, pecans) if they are not sliced then slice them. I had some sliced Italian seasoned almonds on hand. See bag of sliced almonds.
Throw then in the bowl with everything else. Again, see the green bowl, wait, I think it has a chip on it :(
One stick of string cheese. Slice it up, throw it in the bowl. Are you seeing a trend here? See the shipped green bowl.
Season the bowl of stuff with some Sea Salt and Dill. See sea salt, dill and chipped green bowl.
I am watching my weight (GO DOWN) and only used one spoon of Mayo. You can use as much as you want. Mix, mix, mix. See Mayo, and chipped green bowl with stuff in it. Dang I need a new bowl, the chip is really bugging me now.
Viola, yummy chicken salad. Serve as you like. Sandwich, salad, etc.

I totally pictured your chipped green bowl. LOL Ok, your salad thing was sounding pretty yummy until... you had to go add that yucky mayo stuff!
Still may have to give it a try though (I just won't use as much mayo as you did.)
